The new guy Leo has a thing for Delinda, and Sam and Delinda are at odds as Sam wants to hire out Mystique to a group of rich morticians.
Danny and Sam try to figure out the tactics of a ring of card counters. Fred Puterbaugh (Jon Lovitz) professes his love for Nessa, much to her dismay. Ed and Danny deal with an archaeologist's find near the hotel pool.
Ed is framed for murder when enemies from his past resurface. Danny and Mike secretly intervene to investigate and take matters into their own hands. Meanwhile, Sam, Nessa, Mary and Delinda desperately attempt to find tenants for their new joint-purchased home, settling on what they think to be the perfect tenants, only to discover they've misjudged the situation.
Sam has to jet off across the country in search of replacement lobsters when a truckload he purchased for a very important wedding, is stolen. Danny and Mike play detectives to determine the motive and culprit behind the theft. Meanwhile, Delinda's childhood boyfriend Jay (guest star Geoff Stults), shows up with news that he's dying of cancer- and of his final wish to sleep with her. Elsewhere, Mary books Michael Buble (guest starring as himself) to sing for the wedding; but, has to wrangle him in when he refuses to sing, instead wanting to perform comedy or a mime act.

As they prepare their youth football team for the Casino League Championship game, Danny and Mike search for a missing casino employee and aspiring inventor whose hobby may have gotten him into serious trouble. Ed oversees the city-wide search for the missing man, who is the father of one of the boys on the team. Meanwhile, Sam begrudgingly mentors the girlfriend of casino owner Gavin Brunson (guest star James McDaniel), until Sam discovers that her seemingly innocent understudy is scheming to get her fired.

Elsewhere, Delinda meets and falls for Cody Barnes (Michael Lowry), a handsome Rodeo champion.
When Ed is kidnapped, Danny and Mike begin a frantic search of the city to find him. The fact that Ed refuses to let them contact autorities or pay the kidnapper's ransom only makes their search more difficult. Sam arranges a Vegas-style wedding for one of her clients, but it comes to a screeching halt when their lucky rings are lost. Elsewhere, Mary and Delinda collaborate when the Montecito hosts a popular 80's rock band (Duran-Duran).
Chaos is set in motion when Danny and Delinda find a hotel guest who appears to have committed suicide. When Delinda investigates further, she suspects murder and dispatches Danny and Ed on a mission to find the killer which places Delinda in jeopardy. Meanwhile, Sam plays host to a tycoon who is obsessed with hygiene and threatens to leave the hotel when a strand of Sam's hair is found on his shirt. Elsewhere , Mike is reunited with his ex-girlfriend from college who has a strange request for him.
Danny's generous act gets him into trouble with the police and leaves Ed having to clean up the mess. Ed must use old contacts to ensure that an annoying and potentially destructive female guest does not ruin the casino's good name. Meanwhile, Delinda enlists the help of a singer to convince her arrogant chef that the restaurant should be open for lunch. Later she realizes that things other than food can attract patrons. Meanwhile Sam and Mike are dispatched to deal with mysterious screams coming from an elderly couple's room.
Ed receives an unexpected visit from a beautiful former co-worker, whose mere presence puts everyone's lives in serious danger. Danny and Mike are enlisted to protect the gorgeous womanwith a mysterious background, and find it to be much harder than expected. Meanwhile, Delinda and Nessa compete for the affection of a high-roller. What once began as a friendly competition turns into an all-out war as the two vie to see who is more appealing. Elsewhere, a man's bride-to-be strands him at the altar, leaving Mary to save his trip from being a complete disaster.

Delinda (Molly Sims) takes over for Ed and finds herself bored stiff after having to attend a city hall meeting while Sam (Vanessa Marcil) and Mary (Nikki Cox) take over surveillance. Meanwhile, Danny (Josh Duhamel) is in charge of the casino floor and runs into an old high school buddy who'd having extremely unusual and suspicious luck winning millions of dollars. Elsewhere, Mike (James Lesure) is put to the task of clearing a traffic ticket that Ed claims is wrong -- despite the fact that there are photos to provem his guilt. Marsha Thomason also stars.
Sam is over the moon about hosting the "whale of all whales" - a billionare (guest star Dean Cain) she's hooked to stay at the Montecito. With her hands full, she tosses her other clients onto Mary and Delinda. Things get out of hand when Mary's billionaires turn out to be cheating the horse racing system requiring Danny to fly up to come to her aid. Meanwhile, Sam falls apart when she realizes that the billionare is her husband, whom she's been separated from for seven years. Elsewhere, Ed is slapped with jury duty on Valentine's day and deals with the wrath of Jillian (Cheryl Ladd), who thinks he's avoiding the special day on purpose. Despite his efforts to get himself off of the hook, the judge refuses, leaving Ed to have to trust Mike with manning the homebase.
When a local restaurateur (and mother of a Montecito showgirl) is approached by petty mobsters, Ed enlists the support of a long-time friend "Frank the Repairman" (guest star Sylvester Stallone) to quash their extortion attempts. As the two navigate their way through the local mob's hierarchy, Ed discovers that he has a decades-old connection to the ringleader. Elsewhere, Danny and Mike feverishly work to reclaim $100,000 stolen from the casino by a cunning thief. Once the thief's identity is revealed, Danny concocts a clever scheme to make good on the money before Ed discovers the truth. Meanwhile, Joe Rogan (as himself ) visits the casino in search of a little R & R. Sam , Delinda and Nessa who are desperate to be contestants on Joe's show, compete with each other for his attention.

In the third season premiere, Ed's got major problems as the revamped Montecito struggles to finish work in time to re-open on new boss' Monica Mancuso's (Lara Flynn Boyle) schedule as he also tries to lure back Danny and his former staff to prevent a suspected "smash-and-grab" heist that has hit other casinos. But convincing Danny and the gang proves to be difficult since each has his or her reasons for leaving, and what's more, Ed suspects two construction hard-hats are planning an inside robbery once the Montecito's doors swing open again amid much fanfare.
The casino has reopened. Ed and Mike work on a case of counterfeit casino chips. Per his accountant’s suggestion, Danny must sell his father’s house. Later, Danny’s accountant is part of a poker game where one of the players is a man who robs one of the casino’s guests. Monica Mancuso, the new owner, wants a dealer to be fired because he keeps dealing winning hands to the players.
Danny is with blackjack player Gabe Labrador who's wearing a wig and counting cards. The man doesn't want to stop playing and claims he must win big to pay off the men who kidnapped his daughter. Ed, Mike, Danny and a cop from Metro work on the case even though they aren't sure Gabe is telling the truth. Mary seems to still be helping Danny taking care of his dad's stuff. She is still dating Jake. A player who won a lot of money wants to give it back, but then wants it back, then wants to give it again, etc. Sam and Woody (from "Crossing Jordan") are getting very well acquainted... Jordan from "Crossing Jordan" is also in this episode.
Sam's whale is named Trey Cooper, a handsome 30-year-old who brought his Great Dane to the casino. There are a lot of dogs around the casino as the Nevada State Dog Show is taking place. Jillian enters the Deline's dog in the competition. Monica and Danny meet with a 80-year-old woman named Dottie. Monica offers 3 million for Dottie's house in order to build a golf course. Things will become complicated when on the demolition site, construction workers find a skeleton. A CSI believes it could be the body of Seymour "Blue Jaw" Magoon, a member of a 40s gang called Murder Inc. Mike helps a couple who's "stuck" together. Jake seems to still be in Mary's life. Mike is still helping Danny to find information on the woman his father was dating before he died.
After Ed's doctor warns him that his blood pressure is dangerously high, Ed becoms the victim of identity theft. Sam's half-brother visits. Mike borrows Ed's Aston Martin with unforseen consequences.
Sam's brother is staying longer than expected because he's having an affair with Monica. Danny tracks down the woman who appears on pictures with his father.
Danny imagins to be back in the 60s when the Montecito was called the Jubilee. Ed becomes the new president of the casino. He makes Danny the director of entertainment and Mike the head of security. Mary is a waitress who gets a promotion. Delinda opens a dress shop. And Sam starts out as a call girl.
A necklace with a priceless gemstone, the Star of Kashmir, is being stolen while on display in the Montecito.
The Montecito hosts a comic book convention. Mary is checking into the Montecito for a while. Sam is after the black book of one of the world's greatest casino hosts, who just died. Monica wants Danny to be less like Ed. Danny is worried about the Montecito and calls somebody behind Monica's back.
After Monica gets blown off the roof of the Montecito, Danny is the main suspect. Mike is being attacked in the stairway. Casey buys the Montecito.
A televised national poker tour comes to the Montecito and the same time, Casey, not knowing what APAC means, lets the Porn industry host a convention at the Monteceito.
When diamonds are stolen from the Montecito pool during a taping of a Fat Joe music video, Danny (Josh Duhamel) and Ed (James Caan) find themselves relying on amateur sex video footage to track down the thief. Meanwhile, Mike (James Lesure) and Ed investigate a suspicious craps player who rolls tens every time. Elsewhere Sam (Vanessa Marcil) and Mary (Nikki Cox) set out to reveal Mike's secret life as a male stripper named "Hot Chocolate." Vanessa Marcil, Nikki Cox and Molly Sims also star.
Diamonds used as props in a music video are stolen from the Montecito. Ed and Mike are after a suspicious craps player. People think that Mike is a stripper.
Money is missing at the Montecito. It seems like Monica was involved. Mike gets to do the weather report.
It seems like a Las Vegas urban legend has come true when a hotel guest wakes up missing a kidney. Sam and Ed have to deal with a high roller who has a problem with sweaty hands. The Montecito hosts a car convention.
Norma Pitts, one of Monica's friends, is at the Montecito. She finds a finger in the new buffet. Sam has to deal with a customer who doesn't want her as his host.
A chip thief who was caught by Mike and Danny claims that he met somebody who wants to blow up the Montecito. Wolfgang Puck and Gunther are having a cook-off. Sam hears about a masseur at the Montecito who offers "special treatments".
Mary is planning an expensive wedding for one of Sam's biggest clients. Mike and Danny investigate card counters.
Ed, Danny and Mike are looking into various robberies. Jillian is attending a session of a relationship guru. Mary deals with a hard to please European.
Romance begins to bloom between Danny and Delinda, to their utmost surprise. But keeping the relationship tight-lipped proves difficult, particularly when Jillian flies in Delinda's old college flame (Shawn Christian). Meanwhile, Casey organizes a paintball retreat for the department heads.
Ed and Jillian set off on a retreat that proves to be anything but peaceful. Meanwhile, Danny and Mike contend with a suspicious heavy hitter who wants to bet a million dollars a hand. Elsewhere, love is in the air and things are turning very serious for Delinda and Dr. Derek.
hings heat up at the Montecito when Olympic athlete Sasha Cohen stops by; Delinda provides Dr. Derek with an answer to his marriage proposal; Danny and Mike help a couple big gamblers find out if their spouses are cheating; and Sam and Woody go away for a romantic weekend.
Delinda is preparing to get married. Ed is being visited by his past.It was less than thirty hours away from Delinda and Derek's wedding and things were beginning to go wrong. Delinda couldn't choose between Mary and Sam as her maid of honor, Jillian's dress for the wedding was ruined, and Derek didn't want Danny and Mike to throw him a bachelor party. That didn't mean that Derek and Mike weren't still planning on throwing one.
Delinda must face her fiance Derek and tell him about her feelings for Danny. Everyone is shocked by Ed's attack. When a whale refuses to leave a Villa in one of the Monticeto's Hawaiian resorts Sam has to head out there to take care of it.
Ed reveals surprising news from the past when he gets back from Morocco. Mike cotes to Hawaii to help Sam with her problem.
While getting a pedicure, Sam's paycheck arrives, but there's a problem: it's too low! Meanwhile, Danny asks Mike for advice on whether or not he should ask Delinda to move in. Mike turns around to find Sam waiting for an answer about her check. He tells her it's low because three of her clients stiffed the resort.
Woody and Jordan arrive in sizzling Sin City for a murder investigation. Jordan tells Ed that Oliver Kern, first-chair violinist for the Boston Pops, had an expensive Stradivarius violin go missing. Not only that, but he was beaten to death. His freeloading brother Brad is now at the Montecito claiming he has an audition for the Las Vegas Philharmonic in the morning.
Two gunmen have beaten Ed and dragged him out to an open grave in the desert. Anther car arrives in the night. Two more gunmen jump out with a bound and screaming Delinda. One Mr. Chips lays out the deal: If Ed doesn't rob the Montecito of $50 million within 12 hours – the amount of air in the coffin – Delinda dies. There is nothing for Ed to do but agree to this most fiendish of plots.
Over his phone, Danny frantically tells Ed to reach under the seat, grab a can of spray freeze that's there, and spray the hell out of the timing device strapped to his ankle. With only five seconds till he's blown to kingdom come, Ed finds the can, sprays it down, finds some bolt cutters, and...
Danny worries that Delinda is jumping back into work too soon after her kidnapping and suggests that she see a counselor. She disagrees and starts getting ready for work, but an open toilet seat lid causes her to scream at Danny for various annoyances. They go over a list he's been making of little things that have been annoying him. Worst of all, Delinda accuses Danny of being a bad dancer.
Though it's 95 degrees out, an artificial snow machine pumps snow into the air allowing Danny and Mike to have a snowball fight with a group of Christmas bikini babes. Whale Reggie Archibald arrives with his entourage. When they go inside, Danny looks up to see an elf stealing his car from the valet
Mike and Danny watch Mary escort elderly Mrs. Finnegan to a sudoku tournament. Delinda interrupts to show Danny her recent purchase of a "Frisky Ferret" toy. Mike brings Danny to the newly constructed wine cellar where Monica Macuso's secret stash of wine coolers and cheap whiskey has been uncovered.
Ed insists that the whole crew welcome Nicole and her new husband Ollie to the Montecito. Several years ago, she worked in the coffee shop and Ed took her under his wing as a surrogate father. Later, Ed tells Danny and Mike that he doesn't like Ollie and they should keep their eyes on him.
